Most GitS installments are unconnected. The only actuel sequel to the original movie is the followup movie “Innocence” which is a very different beast. You can find a complete relation graph on AniDB.
My recommendation would be to watch the “Standalone Complex” series (2 seasons + 1 special) from the early 2000’s. It’s top tier even though the CG does show its age. Then if you want more you could go ahead and watch the “Arise” tv show from 2015, not bad but not as good as SAC.
I would strongly advise against watching the recent Netflix-produced SAC_2045 : it’s painfully bad and ugly-looking.
It’s been 20ish years but the name that sprang up to mind was Now and Then, Here and There. I don’t remember much except it was pretty bleak and sad.
Very much worth a watch, this show is pretty unique. It does complete its story arcs, so you will not get frustrated by that if that is your worry.
Excellent show overall. Season one was riveting, but season two felt rushed.

Well if large streaming services are off the list, then you could act as one. For instance you could host a Jellyfin instance and make it available to your “someone who is not tech savvy”. On the client side, Jellyfin is very much click and watch. But you take on the burden of being the service host and provider of content.
I am not sure you can find “something that just works” reliably over time without ensuring that yourself.
