Once the mob gets control of an established enterprise, say a restaurant or a car dealership, the mob has no reason to continue doing business as usual. Instead they ‘bust out’ the business for a big, quick profit. They make massive orders and then re-sell to their buddies at a huge discount. They don’t have to worry about paying back the suppliers, because the business isn’t in their names and they won’t be legally responsible.
